Vegan Gluten Free Brownies

No eggs? No Dairy? No problem! You can still enjoy a rich and delicious brownie. Our vegan, gluten free brownies are just the right amouny of cakey and fudgy and deliver a big chocolate punch! People always get nervous when they hear vegan and gluten free. But let's be honest, all the best brownies are basically chocolatey, fatty things held together with bindy things to make a cakey, gooey mess. Scientific right? They are the perfect dessert to make both vegan and gluten free. Trust me, these are so good no one will know.

Cheatin' Wheat Gluten Free Flour

Baking Soda

Baking Powder

Xanthan Gum
4 oz
Bittersweet Chocolate
1 c
Cocoa Powder
12 oz
Hot Water
2 T
Flax Meal
3⁄4 c
Oil
2 t
Vinegar
1 t
Vanilla Extract
1 t
Coffee Extract (Optional)
1⁄2 c
Chopped Walnuts (Optional, Can use any nut or topping)

Instructions

Preheat oven to 350 degrees. Make a foil sling for the 9x13 pan and grease liberally.

In a large mixing bowl combine the Cheatin' Wheat Gluten Free Flour, sugar, salt, baking soda, baking powder and xanthan gum. Blend thoroughly.

Separately, in a large mixing bowl, melt the 4 oz of bittersweet chocolate over a double boiler. Whisk in the oil, cocoa powder and flax meal to form a thin paste.

Remove from heat and whisk in the water, vinegar, vanilla extract and coffee extract (if using).

Add all the wet to the dry mixture and stir vigorously to combine. 

Fold in chopped walnuts or any other additions you want.

Scrape brownie batter into prepared pan and spread into an even layer.

Bake approximately 20-25 minutes or until toothpick inserted in center comes out with few moist crumbs attached. Let cool in pan completely before cutting. If you lined the pans with foil, use the foil overhang to lift brownies out of pan prior to cutting.
