Description

Easy, yummy, chewy, chocolately, butterscotchy, marshmallowy, delicious. People are dedicated to this bar and speak of it with a religious type zeal. As one fan of these classic Nordstrom's Cafe dessert bars stated, "If you do not like these, I don't think we can be friends!" Making a gluten free Nordy bar was no problem and we are glad Katie U. of Littleton told us to try our Cheatin' Wheat Gluten Free Flour in the oringinal recipe.

Ingredients

4 oz
Butter (Melted or Brown Butter)
12 oz
Hershey's Butterscotch Chips (Kroger Brand is also GF)
1⁄2 c
Brown Sugar (Firmly Packed)
2
Eggs
2 t
Vanilla Extract
1 1⁄2 c
Cheatin' Wheat Gluten Free Flour
2 t
Baking Powder
1 t
Xanthan Gum
3⁄4 t
Salt
12 oz
Chocolate Chips (Milk, Semi-sweet or Bittersweet)
1 c
Chopped Pecans (Or Walnuts)
2 c
Mini Marshmallows
Prep time: 20 minutesCooking time: 25 minutesTotal time: 45 minutes

Instructions

Preheat oven to 350° F.

Grease a 9x13" baking pan.

In a medium sized saucepan, melt the butter over low heat. Add the butterscotch chips and brown sugar; stir until melted. This mixture will look grainy and separated. That is ok.

Remove pan from heat and stir in the eggs and vanilla.

In a separate bowl, blend the flour, baking powder, xanthan gum and salt. Add to the butterscotch mixture and blend thoroughly. Set aside to cool so that you do not melt the chocolate chips in the next step.

Once cool, stir in the chocolate chips, marshmallows and chopped nuts. 

Spread batter into the prepared pan.  I like to press the batter into the pan using wet fingertips.

Bake at 350° F for 20 to 25 minutes. Remove from the oven and let cool thoroughly before cutting into squares.

Notes

It is important to ensure the butterscotch chips you buy are gluten free.
